Ingredients for roti

  • 4 tsp baking powder
  • 1 lb (4 cups) flour
  • 1 1/2 ozmargarineor butter
  • 1 tsp salt
  • 1 3/4 cups water


Directions: Mix flour, salt and baking powder together and add water to the mixture to form a thick form dough with moist, add enough water to make dough smooth, knead well and leave for 1 hour with damp cloth covering it, flour the cutting board, cut dough into 16 even pieces, roll each out one at a time on flour board in round shapes, then add margarine or oil on top to base it, roll each pieces into coin shapes and flat the peaks and leave cover for about 30 minutes, roll each pieces out thinly, place flat pan on medium heat then base it with oil, cook roti on pan for about 9 minutes flipping it over each sides until cook, place in clean hand towel and clap with your hands until loose (you can use a covered contain to shake it up instead of your hands).

Beef curry

Ingredients for Beef curry and Potato

  • 6 peel potatoes
  • 5 lb beef
  • 2 tsp marsala
  • 1 tsp salt butter
  • 1 tsp salt
  • 1 chopped onion
  • 4 clove garlic
  • celery and shallot
  • 4 tsp curry powder
  • 1 tsp black pepper or pepper sauce

Directions: Pressure beef until cook, Mix curry, salt and marsla together with 3 tsp water, add mixture to beef, place pan on medium fire with 3 tsp vegetable oil, when oil is heated add chopped garlic, onion, butter, celery, shallot and pepper,add beef mixture and fry for about 2 minutes then add potato and 1/ 12 cup water then cover pan and cook for 30 minutes until gravy thickens and potato is cooked. Put some of the curry potato beef in each roti and fold, eat and enjoy!
