How to cook black eyed Peas cook-up rice recipe Caribbean style

This dish is very tasty, delicious and easy to make and even taste great with the coconut milk. We normally cook rice and peas a lot together without coconut milk but the coconut milk in this dish makes it taste more delicious. We would cook this dish on weekends and old years night. Cook up rice taste better with salt beef or fried chicken or fried fried fish on the side. For me I always cook it with brown rice, because to me it taste much better and the rice is more loosen. To get the best out of this dish, use a big nice pot, I normally used a pressure cooker or a pot like a pressure cooker.

Ingredients

  • 2 cups brown or white rice
  • garlic
  • 1 onion
  • 1lb salt beef
  • black pepper (optional)
  • 2 teaspoon salt
  • 1 tablespoon salt butter
  • 1 13oz can coconut milk
  • 2 cups water
  • green season
  • thyme
  • 1/2 pt black eye peas
  • 1 carrots


Directions:

  • Pressure the peas with two cups of water and salt until cook, I use pressure cooker because it takes less time rather boiling the peas.
  • Do not pressure the peas too soft, add salt beef to boil for about 10 minutes with peas. Seen that the salt beef is already salted, use a pinch of salt or else your dish will be too salty.
  • Add rice along with the can of coconut milk. I normally grate a coconut or blend it, then squeeze out the liquid in order not to have preservatives from can milk.
  • Cut carrots into slices and add to pot, add chopped onion, thyme, butter, and green seasoning. Your green seasoning can be shallot, parley etc.
  • Cook on a medium fire and have pot closed at all times, do not open too often as it generates too much water.
  • The amount of time you cook the food depends upon if the water is dried out and rice must be cooked.
  • Serve with slice tomatoes and some pepper sauce and enjoy.

Note: Do not use pressure pot cover to cover the pot after you finish pressuring the peas, use an ordinary pot cover instead.
